Guillaume Perier is a beekeeper in the Larzac region, with around 180 hives in several apiaries in the surrounding area. He runs his bee colonies according to the principles of organic beekeeping, moving his hives over short distances as the flowers bloom (Larzac flowers, white heather, lavender, chestnut). His small, relatively unmechanized honey house produces a variety of honeys, depending on bloom and year: Larzac honey, chestnut honey, thyme honey, white heather honey, mountain honey and the famous lavender honey.
